My ultimate comfort food - a Fosston classic.


Ingredients

  • 1.5 c Flour
  • 2 t Baking powder
  • 1 Egg
  • 1 t Vanilla
  • 0.25 t Salt
  • 0.666666666667 c Sugar
  • 0.5 c Milk
  • 0.25 c Oil
  • 1 cn Cherry pie filling (the large can)

Instructions

Mix dry ingredients. Stir other ingredients (except cherries) into dry. Pour fruit filling into 9" square baking pan. Carefully pour batter over fruit filling, being careful not to mix fruit topping into batter - the goal is to have a thin, clean layer of batter over the cherries. Bake in 350 degree oven for 30-40 minutes, or until cake is springy to touch. Allow to cool before serving.


Notes

Serve warm with vanilla ice cream or covered in milk.
