Description

Delicious white chicken chili


Ingredients

  • 2 T Vegetable Oil
  • 1.5 lb Chicken, cooked
  • 1 Medium yellow onion, chopped
  • 4 clv Garlic, minced
  • 32 oz Chicken broth
  • 12 oz Tomatillos, chopped and drained
  • 7 oz Herdez brand salsa verde
  • 7 oz Diced green chilis
  • 10 oz Ro-Tel brand diced tomatoes and chilis
  • 15 oz Diced tomatoes
  • 15 oz Canned or frozen corn, drained
  • 0.5 t Oregano
  • 2 t Cumin
  • 0.25 c Fresh cilantro, finely chopped

Instructions

Cook chicken.
Sweat garlic and onion in oil until soft.
Add remaining ingredients and simmer 30 minutes.
Blend 1 can white beans and add to soup to thicken.
Add salt and pepper to taste.
