Hearty classic chili the whole family will love.
Cut stew meat into bite-sized pieces. Sear well on all sides. Cover with water and bring to a boil. Reduce heat and simmer 1 hour until tender; drain.
In a large dutch oven or stock pot, sweat onion until translucent. Add garlic. Add remaining ingredients and simmer for 30 minutes to 1 hour, even longer is better.
Serve with sliced cheddar cheese, fresh flour tortillas, and corn bread. Even better the next day!
Trust me on the spice quantities - it seems like a lot, but it tastes wonderful.
